Perhaps it is that a child can sin before 8, just that they are not held accountable for the sin. Buggeyes, there has to be some point at which one becomes baptized. If you wait until they have clearly sinned beyond any doubt and then schedule the baptism are you not subjecting them needlessly to the consequences of that sin as well? I do not think the Lord is quite as legalistic as to be such a stickler about whether or not the baptism takes place on the 8th birthday, a week later or a month later for example. I think it is the principal of baptism that is more important than the act itself. Yes, the act is important. However, just like we shouldn't be setting the number of footsteps that it is o.k. to take on the Sabbath, I don't think we should be looking to set an absolute date that must be observed for baptism either. The Lord set the age of accountability at 8. This is why we then wait until 8 for baptism.

What tenaheff said.....

I would also like to point out that baptism isn't ONLY for remission of sins, but is the gate by which a person begins the journey into eternal life. Once baptized, a person is able to renew the baptismal covenant by sincere repentance and partaking of the sacrament.

"President Heber J. Grant declared: 'It is our duty to teach our children in their youth. . . . I may know that the gospel is true, and so may my wife; but I want to tell you that our children will not know that the gospel is true, unless they study it and gain a testimony for themselves' (Gospel Standards, comp. G. Homer Durham [1941], 155)."

In the same respect that that we teach our children about the sanctity of marriage by living our own covenants,(They are not in that covenant but they will be there in time) We are responsible to teach them of the Covenant of Baptism.
In 1 Corinthians 3:2 it talks about giving the milk before the meat. I believe we are giving them the milk of the Baptisimal covenant by teaching them correct doctrines. They may not understand fully the covenant now, but later in life they increase in knowledge and wisdom.
In the same chapter in verse 10 it says "According to the grace of God which is given unto me, as a wise masterbuilder, I have laid the foundation, and another buildeth thereon. But let every man take heed how he buildeth thereupon."

Parents give the foundation and as a child matures the responsibilty of learning becomes his or hers.

Let us build that foundation before they are responsible for their actions and they will gain for themselves a testimony of the atonement of our savior.

I think that we should teach them the doctrines of the gospel while they're young. Instill in them christ like characteristics through example. They say the most important years of a childs life is the first 5 years. My grandpa always use to tell my mom that if you teach your kids the gospel while in their youth they will never stray far from the gospel...and to address the baptism subject...I was taught that if a kid knows no sin...and is not at the age of accountability he has no sins to be washed away...I think baptism at the age of eight is to show our submissiveness and obedience to Heavenly Fathers commandments...and like nighthawk said to get us through the gate and onto the path...
