A good idea for vegetarians or vegans is my "Pasta taco salad". Basically, you boil any shape pasta you like (I prefer small macaroni or tiny shells) until tender. Then you add a little salt and some taco seasoning (Do not overdo), shredded carrots, chopped tomatoes, chopped cucumbers, sweet peppers (Any veggie would do). Mix it all up and enjoy.
If you are new to this new lifestyle and trying to start slow, and you miss the extra flavor, you can drizzle a tiny bit of olive oil and a bit of parmesan cheese to your taco salad.
I already started seeing differences in the way my body functions. For the first time, in a long time I did not feel sleepy during the day and I was able to get some work done.
Today my menu was oats with soy milk with cinnamon and fruits, I need something more because it was not enough and I was very hungry by 9-10am. Break was grapes and mangoes and lunch was pelau (Is a local dish) and a salad.
I came home very hungry though, so I made myself a sandwich with lettuce, tomatoes and a little bit of cheese. I also ate the pelau for dinner.
All I will drink later on is my usual peppermint infusion which is amazing.
I feel great so far but it is not an easy transition for me because I love food. For some people, food is just something they "Must" Do, it is not for me. I enjoy eating but I am also aware of the tremendous benefits of trying to eat healthier. That's my main goal right now, trying to become fit.
I had some granola and watermelon for snacking today and it was really great. For lunch, I had mash sweet potatoes and potatoes with lentil peas and broccoli.
I am now making a delicious vegetable soup (Potatoes, carrots, celery) with corn flour dumplings.
