Dice Dragons and Dungeons Class Race
I cannot claim to have picked up these dice in particular, but I have played a game where race/class were set randomly.
Making it work was an interesting challenge in and of itself, but I would be reluctant to do it again overall. Everything felt forced, in an environment where a lot of the appeal is choice in what you are.

I only used them for reincarnation spells but since then I have developed my own method. They are interesting to use when just rolling everything randomly to see what you get. Try a campaign where all the characters and skills were all random rolled and then have the party go out in that method to see how they fared could be interesting.
