Page 5 Introduction Vincenzo

Actually, they really don't celebrate Christmas in Japan or Taiwan. They do have the faux Christmas trees and Santas around, but there is really very little to no Christianity in these countries. Now I can get more western food here in Taiwan, but there is lots of rice and tofu here. I am definitely not a vegetarian, but since I have left the US, I certainly eat a lot less meat. I do however make my own pasta!

Wow, I am not sure if I could live there though. I was a vegetarian for a year, everything went great but the tofu is really not something I enjoyed not the taste itself but the jelly texture.

You should add recipes for you own home-made pasta!

Vincenzo Introduction

They do everything with tofu here. They mix it with a little meat and a light sauce and that isn't too bad. Add a few chile peppers on top and some soy sauce and that is ok, but doesn't get rid of the jelly texture. However, if you cook tofu long enough, it does lose a lot of the jelly like texture.

There is a good bit of meat eaten here. It is just nothing like in the US, where we eat huge steaks and large hamburgers. When I go back to the US, it takes me a while to be able to eat that much again. The strange part is that I still don't change weight no matter where I live.

Writing down a recipe...hmmm. Unfortunately, I am much like my mother in that regards. I love to cook, but writting down a recipe is a problem for me. I kind of just add what I think it needs and don't measure much of anything. Initially, this was a really bad idea since it could lead to a large dish that no one would eat. However, I have learned over the years, so it usually doesn't end up in a big pot of inedible food stuff.

I am getting some more information on Christmas in Korea. That is pretty interesting because of the religious mix. I should also be able to give a perspective of Christmas in Taiwan, since I was here last year.
