In Africa, South America and some parts of Asia you can see evidence of many great civilizations but in Europe there is only the Greeks and Romans, why is that? The talk of the great Aryan race and the white superiority seem to fall flat in history compared to those of other nations.

I think there is quite a bit of talk about other great European civilizations. We often talk about the the great surge of Spanish explorers who opened up North and South America to Europe as well as providing other trade routes to Asia. We talk about the English Empire, on which the sun never set. We talk about the Vikings, and how they exploded out of Scandinavia and traveled and conquered their way into Russia, England, Ireland, Scotland, France, even as far away as the Constantinople.
Discounting the Greeks and Romans? Those alone are enough. The Roman Empire controlled a huge part of the known world. They still have influence to this day. The Greeks basically introduced democracy to the world. Are you really comparing civilizations in South America and Africa to the Roman Empire or Ancient Greece? There is no comparison.
