My Husband was recently at a training course, where they served lunch.
They served, a jacket /baked potato, with a filling of tuna and mayonnaise, with salted peanuts mixed in.
This was served with a salad, and although he didn't like the sound of the salted peanuts with tuna, he tried it, and he said it is absolutely delicious!
It's quick and simple enough to do too!
Ok here's my favorite thing to do with chicken:
(I copied Montana Mike's mountaintop chicken and LOVE it)
Chicken breasts (however many you want)
Worchestershire sauce (enough to cover chicken for marinating)
Portabella mushroom caps (one mushroom per 2 chicken breasts)
Butter
Garlic salt
Honey mustard, or mix spicy mustard with honey)
Chopped, cooked bacon, or packaged Real Bacon Bits
Shredded cheese of your choice (I like a blend of cheddar and jack)
Any other spices of your choice (I use Cajun seasoning & some pepper)
1) Pound chicken breasts flat and marinate in Worchestershire for at least 1 hr.
2) Melt 1/2 cup butter and add a dash of garlic salt
3) Brush tops and bottoms of mushrooms with butter & garlic salt
4) Sprinkle spices of your choice on chicken
5) Broil or grill mushrooms and chicken side by side until chicken no longer pink in middle
6) remove mushrooms and chicken
7) Cut up mushrooms into small pieces
8) Spread honey mustard on chicken, then top with mushrooms, bacon bits & cheese
9) Put back in oven for a few minutes until cheese is just melted
Eat it like you would a steak. mmmm! I like to have a baked potato along with it
I love this recipe, someone told me about a few weeks ago, and it only takes a couple of ingredients and tastes great.
Fry some onion and bacon together in a pan.
In the meantime, boil some potatoes ready for mashing.
When the potatoes are ready to mash, add a bit of butter, salt and pepper, and mix together with the bacon and onions.
Put into oven proof dish, and grate cheese over the top, and put into the oven until the cheese melts.
(You can skip the last bit if you haven't got time, and just mix the cheese into the potato mixture and serve straight off)
My kids love this with a serving of baked beans

Instant mashed potatoes
Cheese
Salt and pepper to taste
Make the mashed potatoes according to the box, put them on one side of the tortillas, fold and fry until tortilla is golden brown. Add cheese. You can eat these with salsa or sour cream. they are really delicious and simple. They have also saved me from going hungry!
