Felipe, what I want to ask is which of your parent's dishes do you like the most: father's or mother's? Do not answer with your magic word "Both".
For me, my mother made some very nice dishes, none of which I would eat now because I am a vegetarian. Later in my life I started cooking for myself as I wanted healthy choices until I was married. My father never cooked much if at all.
My mom (grandmother) was an amazing cook. I can list at least three great meals she used to prepare. One was a lentil and beef stew. It was the most perfect dish for winter. She would also make homemade green spaghetti without having a pasta machine, she did everything from scratch, the dough, the kneading, the cutting, etc.
Another great one was called "Puchero" (picture below) which is a sort of Argentine stew with beef (using ossobuco or other cuts with marrow) and all sort of vegetables. When I turned 5 years old, I recall perfectly that my uncles asked me what I wanted for my birthday and I said "Puchero". Everyone laughed and I didn't know why.
