How do you know what length of time yeast should be allowed to rise within flour before baking?

Usually when your dough doubles in size. When I make pizza dough, it takes around an hour for this to happen.

I usually wait about 2- 3 hours and go from there. I have heard of waiting till the dough doubles in size as a gauge. Maybe I am waiting too long?

Rise Yeast Long How

Most recipes will tell you to wait till it doubles. The issue you can run into is over rising and crating a yeasty taste or big old air pockets. Punching the dough down once it double stops the air pockets if you are not ready to use the dough yet. Most traditional is to rise to double once then push down then place in pan and rise to double again.

Best I have had is to rise once then cook.
