Oh yes I do! I love pupusas especially the cheese ones. I make them for my family but my mom makes them the best smile.gif

For lack of a better way to explain -- Pupusas are a Salvadorian version of a quesadilla. Think quesadilla but imagine all of the edges of the tortillas are sealed up and the melty cheese and goodies are trapped inside with no way out, until of course you sink your teeth into one. Pupusas are also very accommodating. You can fill them with chilies, cheese, beans (frijoles), loroco (a tasty green flower blossom), shrimp (camarones), pork (chicharron), chicken (pollo), and fish (pescado).

Here's the recipie:
PUPUSAS(CHEESE FILLED)
Ingredients
Corn flour ( masa harina MESECA)
Water
Filling:
Mozerella cheese
Sour cream
loroco or zuchinni

Method

1.In a large bowl, mix together the Maseca flour and water and knead
well. Knead in more water, one tablespoonful at a time, if needed to
make a moist, yet firm dough. It should not crack at the edges when
you press down on it. Set aside to rest 5-10 minutes.

2. Filling:
Grade the zuchini and leave in bowl for 30 mins. By then the water from the zuchini should out. Remove the water from the bowl. Grade the block of mozerella cheese and add 3-4 tables spoons of sour cream and the graded zuchini. Mix well until you get a firm but not too hard or squishy mixture.

3.Take a golf ball sized ball of dough, pat it out into a patty, and put a lot of filling in the middle( I like mine with a lot of cheese). Work the dough up and around to enclose the filling and then flatten again. Be careful that the filling doesn't spill out.

4.Heat and place about a tables spoon of olive oil on your skillet over high heat. Cook each pupusa for about 1-2 minutes on each side till lightly browned and blistered. The cheese most likely will ooze out yum!
Remove to a plate with tinfoil and cover till all pupusas are done.
Serve with Curtido (coleslaw) and heated up salsa.

P.s. I didnt have measurements for the water or flour or filling because I usually do it wihout measuring.
