8 oz Almond paste

1/2 c Sugar

2 Egg whites

Pignolia; optional Recipe by: CAROL DAVIS (TANT19A) If you like the Ammaretti cookies you will love these. 8 oz almond paste, 1/2 cup sugar, 2 egg whites, mix

together, makes a messy batter, then take about 1 - 2 tablespoons or larger if you like and roll in either pignolas (pine nuts, my favorite) or flaked almonds or nothing at all. shape into either a ball or crescent. Bake about 10 - 15 minutes in a 350 degree oven on brown paper on a cookie sheet, no grease!! When done slide the brown paper on a wet dishtowel which has been laid out flat on the counter, it must be wet not just damp. Within seconds your cookies will lift from the paper with a spatula.JM.
