Spoon Bread

1 1-lb can cream-style corn

3/4 c Milk

1/3 c Shortening

2 Eggs; lightly beaten

1 c Cornmeal

1/2 ts Baking soda

1 ts Baking powder

1 ts Salt

4 oz Canned diced green chiles

- drained 1 1/2 c Shredded cheddar cheese

Combine corn, milk, shortening, eggs, cornmeal, soda, baking powder, salt, drained chiles and cheese and mix well. Pour into greased 9-inch square pan. Bake at 400F 45 minutes until golden. Serve hot. The actor who played Festus in the old "Gunsmoke" TV series gave us this recipe for spoon bread, which he serves with cornmeal-coated sand dabs.
