Cooking Oils

Excluding health and that we are told not to fry foods - which we do anyhow - which is the best cooking oil for both taste and its' handling or should I say the texture it gives foods? For instance - make your fries taste better or crispier, handling of batter or water based foods, etc.

UPDATE:
I no longer eat any kind of processed oils. See: Hydrogenated Oils

Oils Cooking

I go for sunflower oil as a better option to cook good chips, fish, batter etc. The end product is a golden fried, nice tasting, practically non greasy food!

The only exception to this is if I cut up small cubes of potato to roast in the oven, and for some reason a good garlic flavored olive oil always produces a better taste for this only. (In my humble opinion)
I guess at the end of the day, everyone has their favorite and it's a matter of personal preference and taste!

Now chips have been mentioned, it's made me really want to eat some laugh.gif

For deep frying I use olive oil I find it leaves a clean taste and very little oil on food, this is for my wife.

Prior to marriage I loved using good old lard handles heat well and if you smoke the fat prior rendering it it gives a great flavor to your chips or fish.

In just plain frying stuff in a pan butter or bacon fat were great. Stuff never stuck though it does give a heavier taste to food.
