1 | teaspoon | curry powder | |
2 | tablespoon | oil | |
1 | teaspoon | salt | |
1 | teaspoon | black pepper, ground | |
2 | pound | beef, stew meat, cut in 1/2 inch cubes | |
2 | cup | liquid, use beef broth, water and/or liquid drained from canned fruit, your choice | |
2 | cup | fruit, use apples, pears, canned pineapple chunks, raisins or any fruit you prefer, cut into bite-size pieces | |
1 | rice, hot, cooked | ||

1 | onions, green, chopped | ||
1 | coconut, grated, unsweetened | ||
1 | peanuts, chopped | ||

In a large Dutch oven, saute onion and curry powder in oil over medium heat until onion is soft. Remove onions from pan. Increase heat to medium-high and brown beef (in batches, if necessary). To the crock pot, add onions, beef, salt, pepper and liquid(s). Cover and cook on LOW for 6-8 hours. About 1/2 hour before serving time, add fruit(s). You may thicken stew with cornstarch mixture, if liquid is too thin. Serve over hot rice with your choice of condiments. |
