Orange Kissed Beets

From the files of W. Long Tulsa, Oklahoma 1/3 c Orange juice

2 T Light brown sugar

1 T Margarine

1/2 t Cornstarch

1/8 t Ground ginger

1/8 t Salt

1/8 t Pepper

1 cn 8-1/4 oz sliced beets,

Drained 1 t Golden raisins

Strips of orange peel In a saucepan over medium heat, cook and stir orange juice, brown sugar, margarine, cornstarch, ginger, salt and pepper until thick. Add the beets and raisins, heat through. Garnish with orange peel.
