Good Vs. Evil: Trust

In the vast majority of religions, there is a central struggle between good and evil. My question is, how are we to know what is good and what is evil? Am I supposed to believe that God is the ultimate good just because he says he is? What if God is actually "evil", and he just got to mankind first? This would explain all of the horrible things that happen to people throughout the world. If God is in charge, and he supposedly has ultimate control of all that happens, if he is the ultimate good who never considers doing evil, why does it all happen? Is it punishment?

Good and evil were made by humans.

There would be no such thing as good without evil.
