Citric Acid In Cooking
What is the purpose of Citric Acid In Cooking?
I do no this use it sparingly it is a very strong taste. SOUR to the max. I use it in some dishes for flavor and to lower acid levels sometimes in caning. I know it can be used in milk or cream to make cottage cheese also.
Mostly I think it is just for a sour tart taste in one cooking.
