Salsa,chutney and other relish recipes

we will start with a simple delight

MANGO-TANGO-SALSA:2 small mangoes peel them dice them then cut a sweet green pepper in half or a red pepper if you wish dice the pepper of your choice mince 1green onion

DRESSING :if you wish
1tbsp fine grated orange rind 1/4 cup of orange juice
1tbsp liquid honey
1/4tsp ground cumin
pinch of salt
for those who live on the edge MATOUK`s hot pepper sauce[to taste]

for those who enjoy a change use peaches insted of mangoes

Here is a recipe ideal for bbq time!

Corn Relish

ingredients required

1lb (450g) frozen sweetcorn kernels
1 green pepper and 1 red pepper-- deseeded, then they need to be chopped up finely.
1 large onion chopped up finely
salt and pepper to taste
1 pt (570ml) white wine vinegar
1 teaspoon (5ml) mustard powder
3 oz (75g) soft brown sugar

Method

In a bowl, mix the mustard powder, salt and sugar together, add enough of the vinegar to make a paste.

Put the rest of the vinegar into a pan, on a medium heat, and whisk the mustard paste into it until it is smoothly blended.

Add the rest of the ingredients and simmer slowly for about 20 minutes, or until all the vegetables are cooked.

When cooked, transfer into a dish, and allow to cool before serving as a side dish for your bbq food!

Pico de Gallo

1 med onion diced
6 tomatoes diced
4 jalapeno peppers
1/2 bunch cilantro
garlic powder
salt

Mix together, cover and chill for at least 1 hour, for best results
