Vinegarette Salada Toppers

Summer is back BBQ's smoking we all get wound up on the big juicy steak but tend to neglect our greens.

A salad if done right becomes the silent maker for the best meal had. No one will hardly rave about them but watch if it is a good one almost every one will take seconds.

So lets post the magic toppers that made your friends and family smile.

Oil little water balsamic vinegar mints and oregano I have found works nice. has good shelf life also.

Do you have spiced oil on the shelf share with us please!

I like French dressing on top of lettuce, onions, tomatoes, cucumber and red and green peppers.

To make the dressing,

1 teaspoon of brown sugar
1/2 teaspoon of french mustard
1/4 teaspoon of salt
1/4 teaspoon of pepper
140ml of olive oil
3 table spoons cider vinegar

shake the whole lot up in a jug (with a lid) and pour over the top of your salad.

well, here's a couple to try:
Greek Salad Dressing
1 cup olive oil (can reduce to 3/4 cup)
2-3 tablespoons fresh lemon juice
2-4 teaspoons dried oregano
3 teaspoons fresh minced garlic
1 teaspoon dried basil
2 tablespoons red wine vinegar
1/2 teaspoon salt (or to taste)
1 teaspoon sugar
1/2 teaspoon freshy ground black pepper (or to taste)
1/4 cup freshly grated parmesan cheese (optional)

Shake it up & pour it on.

Caesar Dressing

2 anchovy fillet (or to taste) (Or I will use a couple Tablespoons anchovy paste)
2 fresh garlic clove (or to taste), minced
1 cup mayonnaise (not salad dressing Hellman's is best)
1/4 cup half-and-half cream or milk
1/3 cup grated parmesan cheese
2 tablespoons fresh squeezed lemon juice
1 tablespoon Dijon mustard (Hellman's Dijonnaise is best!)
salt and pepper
2 teaspoons worcestershire sauce (or to taste) (optional)
buttermilk or half-and-half, for thinning

Mix well; refrigerate at least 30 minutes to let flavors meld and then serve over romaine lettuce with croutons and more parmesan cheese. Can add chicken, thinly sliced steak, shrimp or smoked salmon for a nice change of pace.
