Has anybody got any favorite Chinese cookery recipes, that they would like to share.. I really love a good Chinese meal, and this is one of my favorite dishes..
Pork Chow Mein
Ingredients required
500g pork fillet cut into small strips.
225g thin fresh egg noodles
1 tablespoon of oil
1 large onion cut into quite thin chunks
1 green pepper, and 1 red pepper, deseeded and chopped into small pieces
8 large shitake mushrooms cut into thin slices(use any mushrooms if you can't get hold of these)
2 tablespoons of soy sauce
2 teaspoons of cornstarch/cornflour
1/2 cup of chicken stock
1 tablespoon of oyster sauce (optional) salt and pepper to taste
Method
1. Put the noodles into a pan of boiling water, and cook until tender. Drain off the water.
2. Cook thoroughly the pork in a large wok or frying pan, then add the mushrooms, onions red and green peppers and also the salt and pepper seasoning, fry this for about 4 minutes.
3. in a jug, mix together the cornstarch/cornflour, soy sauce and oyster sauce and the stock.
4. Pour this into the wok/ frying pan, and bring to the boil, which will only take a couple of minutes, add the noodles, and mix altogether well.

Thanks for the recipe, Diane! I assume the same can be done for Chicken Chow Mein if pork is not needed. It seems very easy to do and not very long to cook. Are shitake mushrooms very difficult to get a hold of? Do you have to visit a produce store specifically or should most groceries carry them?
Hi Malexander, You can replace the pork with chicken, or beef (but the beef will take longer to cook)
I don't know about the US, but you buy them in supermarkets here, so I would think it may be the same in the US.
They are normally found in the oriental and exotic vegetable section.
To be honest with you though, I find them to have a nutty taste, and if you're not too bothered about having it taste slightly nutty, half the time I just use ordinary mushrooms, it tastes as good to me in my opinion.

I love using Chinese soup stock in my cooking.
Fill large pot with raw chicken bone (or beef with pork)
3 whole heads of garlic do not remove skins just crush with two spoons and toss in.
a large piece of ginger sliced 1/4 inch thick length wise with skin on.
do not boil!
Warm it and as it warm keep skimming the fat off.
Once it turn clear remove large parts and run through a cheese cloth.
Excellent soup stock with large flavor and good healing properties for sick people.
