So, how are restaurant owners fighting back? We go to Bloomfield, N.Y., to see how one small-town restaurant is wooing customers by asking them to pay only what they feel their meal is worth. But can this altruistic business model really succeed?

I'm not sure this could work...you could have a really bad mix of clientele where you get really well off people paying a decent whack for their meal...and then you could get the homeless guy paying a cent for his meal.
I have nothing against homeless people, but you're not going to find many well off people wanting to go out for the evening and share an evening with people who don't often get to dare I say keep clean and showered.
