3/4 c Soft margarine

1 1/2 c Powdered sugar

2 Egg whites

1 ts Vanilla extract

2 1/2 c All-purpose flour; or

-unbleached 1 ts Baking powder

1 ts Cream of tartar

Recipe by: Healthy Cooking for Two In a large bowl, cream margarine and sugar; add the egg white and vanilla extract. In a medium bowl, combine the flour, baking powder and cream of tartar; gradually add to margarine mixture. Cover the bowl and chill for 1 hour. Preheat oven to 400 degrees; lightly coat cookie sheets with cooking spray. Roll the dough on a lightly floured surface; cut into desired shapes with cookie cutters. Decorate with colored sugar, if desired. Bake for 7 to 8 minutes, or until slightly golden. You may decorate with frosting after cookies are cooled. Penny Halsey (ATBN65B).
