Ginger Beer

One pound ginger
4-6 whole cloves
1 stick cinnamon
8 cups water
1 lime

Peel and grate ginger put in water along with the cloves and cinnamon stick.

Set in sun for a day then strain with cheese cloth and sweeten as desired store in glass in fridge.


If too strong cut with water of something fizzy.


Any else have a favorite ginger beer recipe to share?

Beer Ginger

1 whole gingerroot
1/2 teaspoon yeast
3/4 cup sugar
15 cloves
1/4 teaspoon anise (can use fennel or a brewers licorice if you cant find anise)

Directions
1 Take about a half-cup of warm water, and mix with sugar. Then sprinkle yeast on top. Let sit.

2 Boil about 2 litres of water.

3 Peel the ginger root and cut into smaller pieces.

4 When water has been brought to a boil, add the ginger root, cloves, sugar and anise. I like to put the cloves in a small tea ball so I can remove them easily later.

5 Boil for 30 minutes or longer (longer you boil the more bite the ginger has, but I would pull the cloves at 30 mins). Keep it boiling, but not to the point it foams over the pot. You will need to stir occassionally (make sure the stirrer has been cleaned well). Then remove ginger root and cloves.

6 Let the brew cool until it is approx 80F (dont stick your fingers in to test the mixture as you will add wild yeast to the brew and it will hyper carbonate, you can test the temperature of the side of pan that you boiled the brew in with your hands). Then add they yeast mixture to it.

7 Now pour the mixture into a 2 litre plastic bottle (make sure that you cleaned the bottle out well, rinsed it well and it is dry before this step). Top up with water. Make sure you leave between 2 inches of air in the top.

8 Now leave at room temperature for about 1 day. Make sure the yeast has started to react by checking the pressure of the bottle with your hand (you can tell by how the plastic bottle reacts), then refrigerate.

9 Leave in the fridge for at least 1 week. If you leave it in longer, you'll get more pressure -- I usually leave it at least 2 weeks, but it can stay in there for 2 months. Still, it will continue to gain pressure in the refrigerator.

10 When you open the bottle, be very CAREFUL! The pressure should be very high by this time. It's best to do it over the sink or outside, and do NOT aim at anyone!

Might try that one. Vincenzo do your turn the bottle so as to carbonate the mixture as well? I am thinking along of the line of traditional champagne making.

One thing though if you are using this a medicine for sore throats do not boil as you lose the potency of the ginger for healing. Still has a sharp taste but less healing quality.

I would turn the bottle on its side. However, since most will be using a 2 liter plastic bottle, it really doesnt matter too much. When you open the top, be careful because it will have a lot of carbonation - open slowly! Lastly, you really will only need to leave it out of the refrigerator for about 1 day to ensure good activation of the yeast.
