Is it possible to solve this equation: x = x - 1?

Not in standard math. In abstract theory, though, x can be infinity and then the equation is valid. Infinity plus or minus anything is always infinity.

Yeah, the best you could do with that in standard algebra is reduce it to 0 = -1, which… doesn't exactly work.

It will make sense in coding where "X" is a variable number that needs to be decreased by -1. I agree that in regular math this has no answer except for infinity.
