Best defense for a wyvern is a very good offensive. Take the fight to them before they can get a good attack on you. Keeping them off balance can save you from that tail of theirs.
I as a DM like to use a wyvern in dive attacks until they can get a better attack at their prey. Wyverns are smart about these type of attacks and usually get surprise. I find a lot of people do not look up when adventuring.
