I've always considered these both "filler" and "copout" - just some malicious, amorphous blob or jelly, the kind you see in JRPGs, though obviously D&D was first. Still, they're really generic and don't take much thought, you can throw them anywhere, even easier than goblins. Sentient mold or whatever is just a bit on the floomfy side. I know fire is supposed to be good against a good number of these kinds of things, so probably that, though I think normal weapons hurt most of them, so hack and slash like anything else.
Oozes are a great way to make a simple pit trap into a horrible campsite story. They all have really poor AC's though so you need about a 1 to miss.
-- A Black Pudding has has over 100 hp though to compensate for its low AC, the elder form having almost 300 hp! Also it has some nasty attacks, if it hits with its slam attack, it can automatically as a free action use improved grab. If it succeeds in grappling it does another slam attack along with acid damage, yikes.
