I am not a vegetarian, but I do try to eat a minimum amount of meat. It was advertised on the radio today, that it is vegetarian week, so joining in with the true spirit of things, I am posting this simple vegetarian recipe.
Advocado and spinach soup
Ingredients required
1 ripe advocado
3/4 pint of vegetable stock
225g (8oz) spinach
25g (1oz) butter
150ml (1/4 pint single cream
salt and pepper as required
Method
1. Boil the spinach until soft,then drain it and cut it into smaller pieces.
2. Cut the advocado in half, and get rid of the stone. Scoop out the flesh, and mash it up.
3. Melt the butter, add the spinach, and slowly add the mashed up advocado, add the stock slowly, continuing to stir all the time.
4. Season to taste, and liquidize, adding some of the cream until it is of a suitable consistency (to your own personal taste)
Serve whilst still hot.(you may need to return for a minute back to the pan to heat up slightly)

My family and I enjoy vegetarian wraps or burritos every Sunday. Instead of using beef, we use kidney or pinto beans. We add lettuce, tomatoes if we have them, cucumbers, onions, grated cheese and salsa. This is what I made last Sunday:

I would like to know if some of you have great, tasty and filling vegetarian/vegan meals. Often times, while being on a vegetarian or vegan diet I feel way more hungry than usual even when I eat snacks and it's quite distressful. Any help is appreciated.
