The most entertaining thing about watching Rousey fight is her game face, she doesn't want to be relaxed about anything until the match is over. She successfully defended her championship title with a record of 6-0 and sent out an invitation to Cyborg to lose weight and match her.
With regards to Tate her fighting style is methodical. She moves slow and keeps attacking the opponent despite taking so much punishment, perhaps that is why she lasted so long with Rousey the last time.
