What is Opt in email and the differences with Single opt in email and Double opt in email?

Email Opt
Opt in Email refers to the process by which you gather Email addresses. For instance on this site we require Double opt in because the person joining has to both fill in their info and then later confirm that it is correct via a validation Email. With Single Opt in you just fill in a form but may not be required to validate it.
