Hot Crab and Artichoke Dip

1 lb. Crabmeat (whatever you can afford, backfin is good)
1 10 oz. package frozen artichoke hearts, thawed, chopped
4 chopped scallions, white and light green parts only
1 8 oz. package cream cheese
1 cup mayonnaise
1/4 teaspoon cayenne (red) pepper

Just mix all ingredients and zap it. How long depends on the power of your microwave oven; I would suggest 90 seconds, then take it out and stir well, then return to microwave and zap it for 90 more seconds. Stir again, and then zap it for thirty second increments until it is hot and bubbly. You need to serve this dip with something sturdy to dip into it, as its very thick and heavy. that sounds good, but I am sure a sour stomach is sure to follow? In Trinidad we make something called, 'Crab Back' which basically consists of all the meat from the crab being cooked and seasoned and then stuffed back into the shell of the crab. It is then eatten from there with a small spoon or fork.

We do a chili n' cheese dip here with bread that works pretty good. I just tear a big round of sourdough into small-ish pieces, emptying out the inside, but leaving most of the crusty "bowl" to pour the dip into. Then you and your guests use the pieces to scoop the dip from the bowl.

Sounds like your dip could be used with bread also, and maybe JB would avoid that sour stomach smile.gif
