Spiced Watermelon Recipe

1 watermelon
3 3/4 c. Water
4 pieces ginger
2 inch stick cinnamon
1 tsp. Whole allspice
4 cloves
Sugar

Halve and quarter the melon, remove most of the red flesh and use for another purpose. Peel the rind off very thinly and cut the pale green flesh into 3/4 inch pieces. Put the melon in a saucepan with the water and ginger, tie the spices in a medium bag and add. Bring to a boil and simmer until the melon is tender, about 20 minutes. Drain the juice and measure it, adding an equal quantity of sugar.

Stir until the sugar dissolves, add the fruit, ginger and spices. Bring to the boil and simmer for a further 15 minutes. Discard spices and pack melon into hot sterilized jars, filling up with boiling syrup. Seal and store.

Preparation time: 7-10 minutes; cooking time: 40 minutes.
