I am not a big fan of Zucchini but I love this recipe.
I got this recipe from watching another recipe... I had to come up with a recipe for Zucchini my husband grows way to much in our garden.
Roasted Zucchini
2 Medium green Zucchini
1 Medium yellow Zucchini
2 large or 3 small cloves of garlic
1tsp. Sea salt or regular salt to taste
1tsp. Ground black pepper
1 sprig of rosemary or basil or 1 tsp italian seasoning
1/4 cup olive oil or veg. Oil
Directions: Cut the Zucchini like you would cut patatoes for french fries not to small large pieces. ( Do not peel the Zucchini) kids like the yellow and green colour.
Place in a baking dish, chop garlic very fine add to the dish. Remove the rosemary or basil from the stem and add to the dish. Add salt, pepper and olive oil stir until the Zucchini is well coated. Bake in a 350o oven for 10 mins.
The Zucchini should be crunchy not too soft.
My picky kids love this recipe, yours would too. Another vegetable you can add as a side dish to dinner.
