I have found that I do not look at the high medium or low settings when I cook on my Gas cook top. I use flame height and eyeball the flames to set it to the height I desire when cooking. I normally have no problem with undercooked or over cooked food this way. My gas wall oven is getting old. I need to replace it so I can have a better and more efficient one.
I am hoping to buy a gas range this year or next. It is harder to find but I know Jenn Air makes one and not sure who else, that being a a gas convection oven.
I used one back in the restaurant and was impressed with the speed of cooking and the evenness of the heat. No burning the bottom rack pie because the top rack pie was not quite done yet.
